1 cup coconut milk<br />
1/4 cup chia seeds<br />
1/2 tsp vanilla <br />
2 tablespoons honey<br />
sprinkle cinnamon and/or nutmeg<br />

<b>Method: </b><br />
Combine all ingredients into a bowl, let it sit for 10-15mins on the counter to thicken.<br />
Warm gently on stove top for a minute or two - serve.<br />

If you wanted you could try warming the coconut milk first, and then combining the ingredients into a bowl and leaving to sit & thicken. I just did mine the other way round. <br />

<b>Ingredients:</b><br />
2 tbsps raw cacao powder<br />
4 tbsps coconut oil<br />
1 tbsp honey or maple syrup <br />
1-2 tbsps nut butter/spread<br />
drop vanilla essence (optional)<br />

<b>Method:</b><br />
Mix raw cacao powder (cocoa), coconut oil and honey (or sweetener) in a small bowl.<br />
<br />
Using a teaspoon, evenly pour a little chocolate into small chocolate moulds, just enough to cover the base. Refridgerate until hardened.<br />
<br />
Using a teaspoon, put a little dollop of nut butter on top of the hardened chocolate (this will be the middle layer).<br />
<br />
Top off with remaining chocolate mixture, and refridgerate again until set. (Keep refrigerated)<br />
<br />
* Use nut butter/spread of choice (almond, peanut, cashew, or a combination)<br />
* Adjust sweetening to desired level. Preheat oven to 200 degrees Celsius.<br /><br />
Combine almond meal, coconut, honey, cinnamon, cardamom, baking powder & chopped apple into a large bowl. Whisk eggs separately, then add to the bowl of ingredients. Mix well.<br /><br />Pour mixture into greased muffin pan (I use coconut oil to grease) or muffin cases. Top off with extra apple pieces & almond slices. Let's face it, banana always makes a good base. Spinach is great for that extra "green power", and mango & orange just add a boost of yummy flavours. Combine these and you have a winner. It's my absolute favourite at the moment.<br />

When they were continuously sold out of these delicious tubs, I thought it was about time I tried making my own. (Not to mention, <i>Santa</i> was also very good to me this year and gave me an ice cream maker for Christmas) <br />

So here I present to you, raw cacao, chocolate ice cream! I poured the mixture into small heart shaped silicone moulds for something a little cuter in regards to presentation, but obviously this isn't necessary.<br />

<b>Ingredients:</b><br />
1 3/4 cup raw cashew nuts<br />
15 medjool dates<br />
6 tbsps cacao powder<br />
3 1/2 cups filtered water<br />
1 tsp ground cinnamon<br />
1 tsp vanilla extract<br />
<br />
<b>Method:</b><br />
Soak cashew nuts in a bowl of water for around 5 hours or overnight.<br />
<br />
Once soaked, transfer the cashews to a high speed blender. Add the water and blend on high for around 45 seconds.<br />
Add dates and blend for a further 30 seconds on high speed.<br />
Add cacao powder, cinnamon and vanilla extract and blend on high for at least 60 seconds.<br />
Transfer the mixture to your ice cream maker, and make as per your ice cream makers instructions.<br />
Transfer the ice cream to a large container and freeze until you're ready to eat :)<br />
Thaw for about 20mins prior to eating.<br />

With an average weight of around 1.5kg, you'll immediately recognise a Durian by it's tough, spikey outer shell,and enormous size. Handling the monster shell can be quite a challenge, but once you are able to split the different compartments open, you'll find a soft yellow fleshy, fatty fruit - somewhat like avocado in texture (rich and smoothe), and similar to custard.<br />

The Durian is high in sulfur (MSM) - which is what tends to give it a stronger smell, rich in Vitamin E, and contains high levels of amino acid Tryptophan, which raises the levels of seretonin (mood enhancing chemical) in the brain.<br />

I highly recommend taking a trip to your local fruit & veg store or market and trying one of these amazing fruits! The more you eat, the more you crave! Great in salads, or used in yummy cakes, I'll definitely be experimenting with "nature's custard" a little more in the near future... :) <br />

Hubby came up with the idea of these pancakes, ever since wanting to try buckwheat... and I have to say, it got the 2 thumbs up from me. Since I'm a fruit lover, I topped mine off with banana and strawberries, along with coconut flakes & coconut butter - hello taste explosion in your mouth! Great for breakfast, lunch, or dinner... these pancakes are wheat, dairy and sugar free.<br />
<br />
Even though buckwheat is not a grain, and technically a fruit seed (related to Rhubarb), it's probably not a good idea to go overboard on buckwheat if you're following a strict Paleo diet. Buckwheat has a fairly high glycemic index, despite being lower than actual grains, and is high carb. Nice to have every now and then though, as a change from veggies, fish/meat ;-)<br />

4. Add the honey mixture to the dry ingredients, and stir until it forms a 'dough' like mixture. I prefer to use my hands.<br />
5. Gently press macaroon dough into tablespoon sized balls, and place on baking sheet, until all the mixture is used up.<br />
6. Bake in oven for 45-50mins.<br />
7. Allow the macaroons to sit for 15mins before transferring. They are quite delicate when still warm, but should be crunchy on the outside & soft and chewy on the inside when cooled. (because clearly my sweet tooth is never sweet enough). It was then that I spotted an unopened tub of cacao butter, and decided I would make a dipping chocolate for the truffles! You can use this dipping chocolate for any kind of truffle (yep, I plan to put some more yummy truffle recipes up soon). And best of all it's very easy to work with & hardens up perfectly.<br />
<br />
As well as being rich in Vitamin E, essential fatty acids, magnesium and sulfur, cacao butter also has more antioxidant flavanoids than blueberries, black and green tea, and red wine!<br />

<b>Dipping Chocolate Ingredients:</b><br />
1 cup cacao butter, finely chopped<br />
1/2 cup raw cacao powder<br />
1/4 cup agave syrup (or any other sweetener)<br />
1/4 tsp vanilla<br />
pinch celtic salt<br />

<b>Method:</b><br />
Place cacao butter in double boiler pan (or metal bowl) over saucepan of boiling water<b> </b>to melt the butter. Remove from heat just before all the pieces have melted.<br />
Stir in the rest of the ingredients, until smooth.<br />
<br />
Take each individual truffle ball, and dip into melted dipping chocolate using a toothpick. Allow excess melted chocolate to drip off, before placing on a tray lined with wax or parchment paper (if you stick them straight onto a plate, when you try to take one off it will lose the bottom layer of the chocolate... not ideal).<br />
<br />
Garnish with shredded coconut or finely chopped nuts before the chocolate hardens.<br />
<br />
Voila! Your very own raw chocolate truffles.<br />

Celtic sea salt<br />

Pre heat oven to 130 degrees. Wash the kale, and dry throughly.<br />
Remove stems, and roughly chop the kale leaves into large-ish pieces (they shrink when in the oven). Toss with olive oil in a bowl, and sprinkle with sea salt.<br />
Arrange leaves in a single layer on a large baking sheet. Bake for 20 mins until crisp.<br />

Ready for raw? Well here you have it. Normally I'll lightly fry the zucchini or carrot, but not today. I was craving a big bowl of raw food, uncooked. And it certainly hit the spot!<br />

I called it "quirky mango salad" because there's no real theme to it.... I just threw in whatever was in the fridge, and what seemed like a good idea at the time. After all, there's no rules in cooking ;) The mango popped out at me though and added a great burst of juicy flavour to it.<br />

3 Eggs<br />
1 teaspoon filtered water<br />
pinch salt<br />
Smoked salmon to cover omelette<br />
1/4 spanish onion, sliced<br />
1/2 avocado, sliced<br />
1 garlic clove (or 1 teaspoon organic minced garlic)<br />
1 handful baby spinach<br />
1/2 teaspoon dijon mustard<br />
1/2 zucchini, chopped<br />
1/2 tomato, chopped<br />
Balsamic vinegar to taste <br />

<b>Method: </b><br />
Crack 3 eggs into a small bowl. Add teaspoon water & pinch of salt. Whisk lightly.<br />

Heat frypan with a little olive oil until hot. Pour in egg mixture and cook for 2 mins or until edges of the omelette are browning. The top of the omelette will be a little runny, so use a spatula to gently loosen the edges & tilt the pan a little to let the runny egg go underneath the omlette to cook.<br />
Lift omelette out of pan and place on a large plate.<br />

(While omelette is cooking, lightly fry onion & zucchini)<br />
<br />
Top omelette with slices of smoked salmon, spanish onion, avocado, garlic, tomato, and spread a light layer of dijon mustard on top for a hint of extra flavour! Fold in half, or leave open.<br />
Serve with baby spinach on the side, & lightly fried zucchini. Sprinkle with balsamic vinegar to taste for that extra zing.<br />

Line baking tray with aluminum foil, grease lightly with olive oil. Place salmon fillets on tray, sprinkle freshly chopped garlic, oil, celtic salt, and squeeze of lemon on top. Place asparagus sticks on tray next to salmon, and bake in oven for 15 mins, or until just pink.<br />
<br />
While the salmon is cooking, prepare the salad. Combine all other ingredients into a large bowl. Sprinkle with balsamic vinegar and flaxseed oil to taste.<br />
<br />
Grate whole zucchini using a julienne peeler, lightly fry in pan for 1 minute, serve underneath the salmon.<br />

1 Zucchini, peeled<br />
1 Sweet Potato, sliced<br />
1 Beetroot, sliced<br />
1 Onion, chopped<br />

Chop the sweet potato into thin slices. Peel the beetroot and chop into thin slices. Put into a bowl, sprinkle with oil, and season with salt & pepper. Spread potato & beetroot on trays, being sure not to overlap.<br />
Bake in oven for 25mins.<br />

Fry onion in pan, set aside.<br />
<br />
Peel entire zucchini using a Julienne Peeler. They should look like noodles.<br />
Fry for a couple of minutes in pan.<br />
<br />
Mash avocado, season with salt & teaspoon lemon juice to taste.<br />

1/4 cup Pitted Dates, soaked.<br />
1 Avocado, mashed.<br />
1 tsp Vanilla Extract/Bean<br />
1/4 cup Raw Cocoa or Cacao Powder<br />
1/4 cup Water<br />
1/4 cup Raw Honey<br />

<b>Method: </b><br />
Blend/process the dates, vanilla and honey together until smooth. Add the avocado & cocoa powder and process until creamy. Add the water and mix briefly.<br />

So this has to be one of my favourite smoothies. It was the first "green" drink I'd ever created, and the first time I'd introduced Chlorella into my diet. Not only does it taste great, but it's so nutritious! In my mind, there's no better way to increase one's greens consumption than by blending & combining with fruit - making digestion all the more efficient :)<br />

2 tbsp Avocado Oil<br />
1 cup Baby Spinach<br />
1/2 Zuchinni (sliced)<br />
1/2 Sweet Potato (sliced into "fries") <br />
1/2 Onion<br />
1/2 cup raw mushroom (sliced)<br />
1/2 cup Avocado (sliced)<br />
1/2 cup Kangaroo strips<br />
Pine nuts to taste<br />

<b>Method:</b><br />
Preheat oven to 200 degrees.<br />
<br />
Slice sweet potato into thin "fry" like strips. Put them in a bowl, sprinkle with Avocado oil, and season with organic salt, toss until the sweet potato is nice and shiny and coated.<br />
Line baking tray with baking paper, place sweet potato on baking paper, being careful not to overlap the chips. Bake for 20-25mins. The thinner the strips the more crunchy they will be.<br />
<br />
Lightly fry onion & zuchinni.<br />
Lightly fry kangaroo strips for a couple of minutes until tender.<br />
<br />
