Now that we're moving into the cooler months, what's one to do when you feel like a traditional warm rice pudding, but without the carbs and sugar crash? You make coconut chia pudding instead, that's what!
Oh, and Happy Easter to all you beautiful people :)
Ingredients:
1 cup coconut milk
1/4 cup chia seeds
1/2 tsp vanilla
2 tablespoons honey
sprinkle cinnamon and/or nutmeg
Method:
Combine all ingredients into a bowl, let it sit for 10-15mins on the counter to thicken.
Warm gently on stove top for a minute or two - serve.
If you wanted you could try warming the coconut milk first, and then combining the ingredients into a bowl and leaving to sit & thicken. I just did mine the other way round.
You can serve this warm or cold, I personally think it's more suited to warm :)

Mango, Passionfruit & Coconut Chia Pudding
Summer is well and truly on its way, and what could be more refreshing than the combination of mango, passionfruit and coconut? I love all of these amazing flavours, but it's even better made into a nutrient rich, chilled Chia seed pudding!
Ingredients:
1/2 cup almond milk
2 tablespoons chia seed
2 tablespoons organic shredded coconut
1 teaspoon vanilla extract
1 teaspoon agave nectar (or sweetener)
1 mango (diced)
1 passionfruit
Method:
Combine almond milk, chia seed, vanilla, and agave nectar in a bowl.
Gently mix in the coconut, 1/2 mango, and 1/2 passionfruit.
Refrigerate for 30-60 minutes.
Once chilled, top with leftover mango & passionfruit.
Yum!

Chia Seed Pudding
This is one of my favourite pudding recipes. Chia seeds are a superfood, packed full of nutrition - protein, fiber, omega 3's (more so than flaxseeds), minerals & antioxidents. Better yet, this dessert or snack can be whipped up in a matter of seconds & tastes just like vanilla rice pudding!
Ingredients:
1 cup Almond milk (or any milk of choice)
3 tbsp Chia Seeds
3 tbsp Agave Nectar (or other natural sweetener of choice)
1 tsp Pure Vanilla extract/bean
1 tsp Ground Cinnamon
Method:
Mix all ingredients together in a bowl, put in fridge to set for 2-4 hours. Feel free to top it off with fruit of your choice. Yum!
