Warm Coconut Milk Chia Pudding

Now that we're moving into the cooler months, what's one to do when you feel like a traditional warm rice pudding, but without the carbs and sugar crash? You make coconut chia pudding instead, that's what!

Oh, and Happy Easter to all you beautiful people :)



Ingredients:
1 cup coconut milk
1/4 cup chia seeds
1/2 tsp vanilla
2 tablespoons honey
sprinkle cinnamon and/or nutmeg

Method:
Combine all ingredients into a bowl, let it sit for 10-15mins on the counter to thicken.
Warm gently on stove top for a minute or two - serve.

If you wanted you could try warming the coconut milk first, and then combining the ingredients into a bowl and leaving to sit & thicken. I just did mine the other way round.

You can serve this warm or cold, I personally think it's more suited to warm :)

Nut Butter Chocolate Cups

Inspired partially by the old school peanut butter cups, and partially by the usual nut & chocolate combo... I thought I'd experiment with something similar to treat my taste buds. These little guys literally melt in your mouth... (can you see the condensation... can you see it?)

Chocolatey on the outside...
Nutty on the inside...
Bite size, raw but yummy, they are sure to curb your cravings! You can make them in patty cases, or in a metal chocolate mould. I used my trusty silicone heart shaped mould... (too cute, right?)


Anyway, enough rambling. I'm sure you want to get on to the "how to" part ;-) Enjoy the simplicity of it all, but more importantly enjoy eating them!

Makes approx 12 small cups
Ingredients:
2 tbsps raw cacao powder
4 tbsps coconut oil
1 tbsp honey or maple syrup
1-2 tbsps nut butter/spread
drop vanilla essence (optional)

Method:
Mix raw cacao powder (cocoa), coconut oil and honey (or sweetener) in a small bowl.

Using a teaspoon, evenly pour a little chocolate into small chocolate moulds, just enough to cover the base. Refridgerate until hardened.

Using a teaspoon, put a little dollop of nut butter on top of the hardened chocolate (this will be the middle layer).

Top off with remaining chocolate mixture, and refridgerate again until set. (Keep refrigerated)

* Use nut butter/spread of choice (almond, peanut, cashew, or a combination)
* Adjust sweetening to desired level.

Chocolate Milkshake

I have so many avocados I don't know what to do with them all! If you were to have asked me just one year ago how many different uses there are for avocados, I would have said one (in salad of course).  Well, clearly all that has changed. Fast forward to now, and I present to you yet another delicious avocado invention!



Who says you can't indulge in a chocolate milkshake and be healthy? Thick, chocolatey and creamy... what more could you want? :)

Serves 1
Ingredients:
1 cup almond milk
3/4 cup filtered water
1/2 avocado
4 medjool dates
2 tsps raw cacao powder
1 tsp coconut oil
1 tsp raw honey

Method:
Put all ingredients in a high speed blender, and blend until smooth. And more or less water depending on the consistency you want.

Almond Muffins with Apple & Cinnamon

What's better than the combination of apple & cinnamon? Almond muffins with apple, cinnamon & cardamom! Sugar free, wheat free, dairy free... what more could you want for a yummy healthy snack?


I whipped these up last night in matter of minutes. 30 mins to be exact. From start to finish (...first bite). I then raced over to the in laws to share them around, only to be disappointed to learn they were almost about to tuck into dinner (cue me eating more muffins than my stomach could probably handle.

Makes approx 12

Ingredients:
2 cups almond meal
1/2 cup shredded coconut
1/2 cup raw honey
1 tsp cinnamon
1 tsp cardamom
1 tsp baking powder
1 cup chopped apple pieces
4 eggs

Method:
Preheat oven to 200 degrees Celsius.

Combine almond meal, coconut, honey, cinnamon, cardamom, baking powder & chopped apple into a large bowl. Whisk eggs separately, then add to the bowl of ingredients. Mix well.

Pour mixture into greased muffin pan (I use coconut oil to grease) or muffin cases. Top off with extra apple pieces & almond slices. Bake for 25 minutes.

Best served warm, drizzled with honey and/or coconut oil :)

Banana & Avocado Smoothie

Lately I've been craving avocado... I think it must have something to do with all those healthy fats & vitamins - full of omega 3 & 6, vitamin C, E, folate & patothenic acid (b5) ;-) Now, instead of making the usual salad or chocolate mousse... I wanted something really thick, creamy and nutritious to drink on a hot Summer's day (in my awesome rainbow hammock, to be more specific). So what better than to make a cool, refreshing avocado smoothie?!

Let's face it, banana always makes a good base. Spinach is great for that extra "green power", and mango & orange just add a boost of yummy flavours. Combine these and you have a winner. It's my absolute favourite at the moment.

Serves 2
Ingredients:
1/2 cup almond milk
3/4 cup filtered water
1 banana
Handful spinach
1/2 avocado
1/2 mango
1 tbsp raw honey
(optional) 1 tsp coconut oil
(optional) 1/2 orange

Method:
Combine all ingredients in a high speed blender. Pour into a big glass, enjoy :)
Soooo delicious & satisfying!
